Vodka + Vanilla Beans = Vanilla Extract

Last night I bought a bottle of Absolute Vodka ($12). It's not what you think. I don't drink. I bought it because I make my own vanilla extract for cooking/baking and I was running low. It takes about four months for the vanilla beans and vodka to turn into vanilla extract so I didn't want to wait until I was out.

Of course now I have to use a store bought extract (if I need it) during the next four months (I think I have some). I guess I need to have two bottles, one that is ready and one that is "brewing." The good thing is that I don't use it very often, but I like to have it handy, especially during the holidays!
